
Mutton Bhuna - lets_eat_with_prachi
This is the one that’s won over my friends and family
Ingredients
- 500g Mutton, small pieces with bones
- 2 medium Onions, finely sliced
- 2.5 tsp Ginger garlic paste
- 4 tsp Coriander seeds
- 2 tsp Cumin seeds
- 1 Bay leaf
- 2 small pieces Cinnamon
- 4 Cloves
- 2 Black cardamoms
- 4 Green cardamom
- 25 Black peppercorns
- 1/4 tsp Turmeric powder
- 2 Green chillies, cut into halves
- 3 tbsp Curd/yogurt, whisked
- 1 tsp Kashmiri Chilli powder
- 1 tsp Salt
- 3 tbsp Refined oil
- 2 tbsp Chopped coriander, for garnish
Preparation
- 1. Roast the Bhuna Masala spices in a pan on low heat for 3 minutes.
- 2. Grind the roasted spices into a fine powder.
- 3. Slice the onions, cut the green chillies, and chop the coriander leaves.
- 1. Heat oil in a pressure cooker/heavy-bottomed pan.
- 2. Fry the sliced onions for 10 minutes till golden.
- 3. Add the mutton pieces and sear/bhunno for 5 minutes.
- 4. Add the ginger garlic paste and fry for 2 minutes.
- 5. Add the turmeric and Kashmiri Chilli powder, and bhunno for 5 minutes.
- 6. Add water and pressure cook for 4 whistles or cook covered in a pan for 45 minutes.
- 7. Mix in whisked curd/yogurt and cook for 2-3 minutes.
- 8. Add 2-3 tsp ground Bhuna Masala powder and fry for 3-4 minutes.
- 9. Garnish with chopped coriander leaves and serve with naan or rice.
